One of the most characteristic vegetable in our kitchen in autumn and winter is artichoke. Cynara scolynus comes from Ethiopia and it was widespread in Europe due to the Muslim influence, which spread so many varieties of vegetables and seasonings as many farming techniques that are still used today.

This vegetable is very healthy for the body and therefore also its value in the food, is important in various treatments. It helps combat high cholesterol levels, reducing its proportion in blood. It is also suitable for diabetics or those suffering from various liver diseases. It also reduces the risk of atherosclerosis and is an excellent diuretic.

It provides various minerals such as potassium, essential for the proper functioning of cells, calcium, essential for healthy teeth and bones, and magnesium, with various functions in the nervous and muscular systems. It also contains vitamins, among which vitamin C or ascorbic acid, B1, or thiamine, B2 or riboflavin, and cinarine, an active ingredient which is responsible for many of its medicinal properties.

Artichokes are mainly used in the preparation of main courses, although often accompany various meat recipes in the form of stew with other vegetables. To cook it, first you need to remove the outer leaves and cut the stem if it is too long. It is usual to split them in half, when making the cut, put them into boiling water immediately because, otherwise, oxidation occurs. Another way to avoid this process is to spray the leaves with a squeeze of lemon.

You can cook it directly on the oven or with sauce. To remove its racy bitterness, boil it for ten minutes with as little water as possible to avoid loss of vitamins, and then withdraw the liquid. After that, cook to taste. Among various options there are artichokes with sauce, made with onion, garlic, water and vegetable juice, baked, with or without batter, sautéed with ham, breaded, or cold accompanied by vinaigrette.
