Lovin’ Blueberry Muffins

I am not particularly fond of  a sweet breakfast, that’s why I eschew pancakes in favor of more savory fare like eggs and bacon. But if push comes to shove, I would rather eat a muffin for breakfast rather than a pancake.

Muffins are quite filling and I think it’s the best complement to morning coffee. If you need a quick breakfast, grabbing a muffin from the bread basket is the easiest solution. It will surely fill you up and give you that quick energy boost that you need. That heft and heaviness all goes to the stomach.  I also love that muffins are so versatile. If you’re having problems with your, uhm, digestion, muffins made with bran gives you the fiber you’ll need to push things south. Muffins are also not very sweet so, as I previously mentioned, it makes a perfect compliment to black coffee.

In these health conscious times, I think a muffin is a better alternative compared to other hearty breakfast items. And compared to other breads and pastries, I think a muffin is a better alternative. Aside from the fiber it gives you if you get the fiber-rich varieties, you can also get muffins that are filled with fruit, which contain a lot of vitamins and minerals. I particularly love blueberry muffins. I think blueberries in muffins are one of those classic combinations – like orange and chocolate, only healthier.

The Muffin – Cupcake Debate

One of the more contentious subjects about muffins is what differentiates it from cupcakes. Both of these delectable food items do look the same. So what makes them different from each other?

The most obvious difference between a cupcake and a muffin is the icing or frosting. Only cupcakes have this sweet topping. But the difference is not just superficial, even the very components that make a cupcake or muffin are different. A muffin is denser and firmer while a cupcake is already within the “cake” territory. You get a very firm texture with muffins but with cupcakes, cutting through it will give you the sponginess and airiness of a cake. You can immediately see the difference when you cut through them. The firmness of the muffin makes it easier for to incorporate additional ingredients to the batter – like fruits or chocolate chips. Cupcakes generally do not have this kind of incorporation. What it will have may be a filling of frosting or icing.

Since today is also National Blueberry Muffin Day, why don’t you commemorate with other foodies by making your own blueberry muffins? There are many variations on blueberry muffins that you’ll be amazed at the extensive recipes you can find here in Recipe Finder.
